It's familiar enough that fans will be excited to see it, but so little is known that it would be almost new to explore. There are many unknowns beyond what was revealed in Chamber of Secretsand there is a lot to see.
Seeing the school look new and shiny can be fun, like seeing the castle as it should be. There would probably be many differences between the more familiar castle and the new one. This would give players plenty of reasons to explore this it wouldn't mean exploring exactly the same map that existed in the first game.
Interacting with the founders of Hogwarts would be a lot of fun
Powerful wizards and interesting personalities
Although it is known that there was eventually a disagreement between the founders, when the school started, everyone was working together to build something new. The founders were mostly explored in the Sorting Hat songs and the creation of the chamber when things were starting to fall apart so this would be a good opportunity to see all four at their best and when things were more cohesive between them.
Interacting with the likes of Hufflepuff, Gryffindor, Ravenclaw, and Slytherin would be exciting for many HP fans. We know very little about them beyond what their Houses represent and there is much that could be added. And, as the player chooses his House Hogwarts Legacyit would be even more exciting to not only choose a House, but also study directly under the founder.

Discovering the truth behind the stories
In terms of its ability to tie into HBO's Harry Potter series, there's a lot of potential. The founders, although mysterious, are the central driving force behind the Horcrux hunt near the end of the series. Almost all founders had an important object that becomes a Horcrux, while the Gryffindor blade is the object that destroys them. It's an important link to the series and something that can be explored in the game.
Fans know far more about each founder's downfalls than they do about the founding of Hogwarts itself. It's strange that such an important era has been abandoned for so long, but seeing it come to full life with the possibility of meaningful choices, bonds of friendship with new companions and a reworked setting would be more exciting in this format than on television. series.
Just like the relationship with Professor Fig in the first game, players would actually be able to form a relationship with the founders, meet them in person, and see what really happened, as opposed to the stories that were passed down. Additionally, the first game explored the idea of Ancient Magic, and the sequel could really lean into that idea as it takes place much earlier.
