With Brandon Sanderson planning an entire project Born from the mists trilogy and two more Elantris books, your projected schedule anticipates The Stormlight Archive Book 6 will be released in 2031, meaning a seven-year wait between volumes. This is by far the longest wait between volumes since the first book came out. What is perhaps even more shocking is that there won't be a main Cosmere book released again until December 2028, when the next Born from the mists book comes out. Emberdark Islands will be released before, which is another one of his secret projects.
The problem with writing something so successful and beloved is that there is a constant desire for more, and Stormy Archive fans will have to make do with the first five books for some time. These books are an immense undertaking, and Sanderson undoubtedly deserves a break to pursue his other interests and creative stories. Yet, The Stormlight Archive will be missed. On the bright side, the seven-year wait in the real world will add to the emotional weight of the planned time jump in the world between books 5 and 6.

Mistborn and Elantris will expand the Cosmere in the meantime
The main positive aspect of having to wait so long The Stormlight Archive is that there will be several massive Cosmere novels to enjoy in the meantime. Mistborn: Ghostblood and the Elantris sequels should continue to build on the overarching narrative and may even feature some head nods and, if we're lucky, character appearances related to The Stormlight Archive books. When readers can pick up volume 6, the Cosmere will appear larger than ever, making the experience more rewarding.
